June 11, 2025 Lunch - Leftover Eggplant Parmigiana with Salad. Dinner - Sautéed Salmon, sautéed, Smashed new Potatoes, and snow pea salad.
The garden is at its most productive now. I picked lettuce yesterday and again today for dinner.
I walked around two blocks this morning, about 1900 steps at 7:00 a.m. when it still was under 70 degrees. It hit 92 degrees later in the afternoon.
For breakfast, I toasted a bagel, spread it wit cream cheese and garnished it with cream cheese, red onion slices, Gravad lax and capers. I ate 1 1/2 slices and Suzette ate 1/2 slice and I drank green tea with it.
At 1:00 i heated the remaining eggplant Parmigiana on a pile of spaghetti and dressed a pile of fresh lettuce from the garden with a simple sherry vinegar and Spanish olive oil dressing.
I drank a glass of Kirkland Chianti Classico Riserva.
I listened to Frank’s depo from 9:15 to 4:00 but also was able to classify expenses on Bank and credit card statements and sent them to Shahin.
I also gathered documents for Dana’s closing..
After Suzette went to exercise class and I rested at6:30 we prepared dinner.
Suzette had thawed two salmon filets and had picked a lot mor potatoes.
At 6:30 we went to the garden and picked chives, a sprig of tarragon, several sprigs of thyme, snow peas, and lettuce.
We added store bought snow peas to the ones from the garden and Suzette cooked them all in the microwave and added them to the lettuce, and sliced cucumber, and radish salad dressed with a white Tuscan balsamic vinegar and flavored olive oil to which I added a minced clove of garlic and about 1 T. of minced tarragon and a pinch of salt.
Suzette smashed and sautéed a pan full of new potatoes in butter and olive oil and Suzette opened a chilled bottle of Albariño from Costco.
Everything was amazing. Then we watched the third game of the NBA finals that the Pacers won. After the game we went too bed.around 9:00.
