July 10, 2024 Lunch - Chili Relleno Burrito. Dinner - Shrimp Scampi Primavera over wide linguini pasta
Neither of us slept particularly well. I woke up at 3:30 and went back to sleep at 4:30 and slept until 8:00.
I ate a bowl of granola with yogurt and milk and fresh apricots diced.
Then at 1:00 I watched England beat The Netherlands to advance to the Euro Cup final against Spain on Sunday. At half time I heated the chili Relleno burrito left from lunch on Monday.
I then checked the Market and it was another good day with my portfolio increasing 1.3% to another record high.
I then watched the second half and was thrilled when England won.
At 3:00 Suzette arrived and I drove her SUV to pick up 10 bundles of cedar shakes.
When I returned it was after 5:00 and we had invited Willy and Mike for dinner at 6:30, so we started prepping dinner. I sliced and diced a yellow and green zucchini and shelled and deveined 1.2 lb. of large 16-20 heads off shrimp and peeled and minced two heads of garlic from our garden and a shallot and two tomatoes.
Suzette boiled four bundles of 1 inch wide pasta and sautéed the shallot and the garlic in olive oil and a tiny amount of butter (we ran out of butter).
Then she added white wine and after a couple of minutes she added the dced Zucchini and the tomatoes. Finally she added the shrimp and then served the mixture over a pile of the pasta and garnished with grated Parmesan cheese and minced fresh basil.
Willy and Mike came at 6:30. Mike brought wedges of Cambozola and a truffle brie and a La Brea baguette from Smith’s. Before dinner we drank Josh rose that was very niece chilled. We toasted slices of baguette to eat with the meal. Willy drank vermouth. The rest of us drank rose’.
After the meal we ate some of the cheeses on toasted slices of baguette with red wine, Embroidery California Pinot Noir and Willy drank Malbec.
We watched Argentina beat Uruguay and then Mike and Willy left and we went to bed.
