September 10, 2012 Dinner - Grilled Halibut, PPI Calabacitas
and Cucumber salad.
We made a simple meal for Max and Jane. Suzette grilled a 1 pound halibut steak coated with lemon slices and
butter and we heated the last of the Calabacitas made with fresh corn from
Moriarty, tomatillas, fresh tomatoes, ground pork, onions, and squash from our
garden; and we served the last of the cucumber salad made with cucumbers from
our garden seasoned with about 1Tbsp. of thinly sliced red onion with the addition of 1 ½
Tbsp. rice wine vinegar and ½ Tbsp. of sugar.
The salad was better after a day in the fridge and the halibut was
cooked perfectly to just the point where the translucent uncooked portion was
cooked throughout and it flaked easily.
We drank a bottle of Concannon Sauvignon Blanc.
After dinner we had parfait glasses filled with scoops of
vanilla ice cream and covered with the last of our brandied peaches from
Suzette’s Center for Ageless Living with coffee and cognac.
