March 19, 2022 Lunch - Steak scrambled eggs with Toast. Dinner - Roasted Corn Beef with baked Potatoes, carrots, and Sauerkraut 


It was a strange but very satisfying day.  It started at 2:30 a.m.


I watched the news from Ukraine for thirty minutes and then worked on the brief from 3:00 until 6:30.


Then I slept until 11:30.


Suzette had scrambled some eggs with steak and spinach and left me some.  I toasted two small slices.of French baguette that I toasted and spread with butter and orange marmalade and made a cup of Earl Grey tea to go with the eggs.


Suzette had also put the corn beef I bought two weeks ago in the oven covered to bake for 2 1/2 hours at around 300 degrees before she went to work in the garden.


After lunch I watched Baylor plat North Carolina in the second round of the NCAA basketball tournament.  Baylor erased a 25point deficit to tie but lost in overtime.


Then at 1:00 I showered and went outside to help Suzette take the cover off the pond and then I spent an hour trimming the Don Juan rose bush on the patio.


There is more trimming to be done but this was a good start.


I rested for a few minutes and then we drove to Vara to pick up our bi-monthly allotment of wine.  This month I selected four bottles of Grenache Rose for summer.


We are allowed a monthly tasting so we took a table and Suzette ordered a glass of Sangria and I ordered a flight of four wines: a sparkling rose, an Albariño, a Grenache, and a Tempranillo.


We looked at the menu and saw a new item; toast spread with goat cheese and garnished with slices of pimiento sautéed briefly in olive oil and garlic. It was only three thin ish slices of M’Tucci’s bread but it was enough to convince Suzette she could replicate the dish at the Greenhouse Bistro with bread made by her new baker.


We then drove to the Smith’s on 4th St. to buy a few items.  We bought carrots, a red bell pepper, bananas, parsley, green onions, cookies, and a 12 pack of Negra Modelo.  We looked for discounted Murray’s cheese but there was none. This is the nicest Smith’s store in Albuquerque.


We drove home and unloaded and I made a cup of tea and ate two of the new cookies, a double filling of chocolate between two shortbread cookies, quite lovely. 

We watched some news and rested and Suzette had a scotch until about 6:30 when we started dinner.  I quartered a bowl of butter new potatoes Suzette had washed and three of the carrots we bought today.


Shen roasted the carrots and potatoes in the oven for about an hour.  During the last thirty minutes she added the cooked corned beef and some sauerkraut to the baking dish and baked it covered.



Suzette then made a sauce combining the remaining horseradish cream sauce with Mayo, mustard, and more horseradish.




Finally she fetched two apple ciders from the garage fridge and decorated the table with green four leaf clovers.


We ate and celebrated our belated St. Patrick’s Day as we watched another episode of The Last Kingdom.


After dinner we watched a second episode of The Last Kingdom, I with a cup of tea and Suzette with a sip of cognac, and then went to bed at 9:30.
