Dinner - New Recipe Penne Pasta tossed with Sautéed Scallops, onion, garlic, tomato paste, and Serrano ham served on chopped arugula
We improved upon the dish i ordered at Hotel Paisano in Marfa two nights ago tonight for dinner.
That dish tossed bacon in a tomato Alfredo sauce. Tonight we improved upon that by sautéing sea scallops with diced onion, minced garlic, 2 T. of tomato paste, and a handful of sautéed to crisp Serrano ham plus heavy cream and white wine to create a white wine cream sauce and then tossing cooked Penne pasta in the cream sauce and serving it over chopped fresh baby arugula and garnished with grated Pecorino - Romano cheese. We drank glasses of Pinot Gris for dinner.
For brunch I ate the last bowl of PPI chicken soup I made last night plus a toasted piece of focaccia smothered under a pile of chicken salad.
We cleared the leaves from the pond over and re – installed it. Suzette attended the grand re-opening of her favorite Goodwill store on San Mateo and 8 rode my bike the four mile circuit of the short loop.
We cooked dinner and watched the Golden Globes and PBS’ Little Women production by Masterpiece Theater.
After dinner I ate a few pecans and two chocolate covered cherries and ate an orange with a cup of green tea.
At 9:15 we made the bed and crawled into bed.
