Jury 13, 2015 Day 1 of Kitchen Remodel Beef Pot Pie and Caprese Salad
Today I finished my brief for the 10th Circuit and demolition of the old kitchen began.
We had made two beef pot pies a couple of days ago and had a PPI one left in the fridge. We also had a half bottle of Famille Perrin Cotes du Rhone. When Suzette did not appear by 6:15 I put the pot pie in the oven to warm and made a Caprese salad with two tomatoes, slices of mozzarella (Costco), and fresh basil leaves from our garden. It has rained almost ever day so everything is growing really well, including the basil.
Suzette came home around 6:45 and we were ready to eat by 7:00 after we found the balsamic vinegar and the last of Portuguese olive oil among the boxes of food stuffs in the dining room.
We ate a simple dinner while watching a re-run of Las Vegas 1999 with updated values to 2014.
I can already see how it is going to get really difficult to cook the kind of food we usually cook as things progress. As my water case client said, “You are going to be camping out pretty soon.”
And so we shall.
Suzette had some Spumoni ice cream and we both drank small glasses of Bacardi Select (Lowe’s $13.99 for 750 ml.) that I liked a lot. The mixture of aged rums reminds me of Martell’s Cordon Bleu, a rather lively mixture of cognacs from different years.
It rained again, so we decided to move our cooking inside, instead of on the back porch as we had originally decided, so will get a preview of how it will be living with our kitchen combined with our TV room sooner than we thought.
Bon Appetit
