February 8, 2015 Brunch   Keilbassa and Neufchâtel Omelet   Dinner  Grilled Mahi Mahi, and Asparagus with Ratatouille

The best meal of the day probably was brunch.  I minced 1 Tbsp. of shallot bought yesterday at Ta Lin for $1.49/lb. and diced up about ½ lb. of Keilbassa Sausage and 3 oz. of Neufchâtel cheese (Costco A.O.P. for $3.99) and Suzette sliced thinly ½ avocado and then made an omelet with those ingredients.  I drank a can of Jumex Mango nectar and Suzette drank her traditional Sunday morning drink, a Bloody Mary.




We then went to the Albuquerque Art Museum and saw two wonderful new exhibits; the larger one featured Central New Mexico art and the smaller one featured mock ups and submittals for Albuquerque’s 1% for the arts public art: On \off of/ the Map. 

Because so many pieces usually hung in the semi-permanent collection exhibit were included in the of Central New Mexico Exhibit, there were  holes filled with new pieces of art and one of them was a small encaustic by Howard Cook that looked like the cartoon for my larger Howard Cook encaustic of the mountains.   Here are the two pictures, and you can judge for yourself:

After the museum we rested for an hour and Suzette walked and I rode for an hour and read Higher Call by Makos, my book club book for this month.

At around 5:30 we decided to make dinner.  It was simple.  We grilled the asparagus I marinated in Quinta de Tedo olive oil last night and the two ½ lb. mahi mahi steaks I bought at Sprouts Farm Market yesterday ($5.99./lb) and heated up the PPI Ratatouille.  I also heated up about ½ cup of PPI rice.  We were finished heating, grilling and plating dinner by 6:00, in time for 60 Minutes while we ate dinner.

We drank a very interesting new white wine I bought at Trader Joe’s yesterday that we both liked very much and will be one we drink much of this summer, R.G.M.V. (Roussanne, Grenache Blanc, Marsanne and Viognier) from California’s Central Coast.  We loved its tangy fruity flavor and reasonable price of $4.99. This is the closest wine I have found to express fully the style and contain the Southern Rhône grapes I have been looking for during the last few years.  




After dinner we each ate a bowl of mocha Blue Bell Almond Fudge ice cream with Kahlua and a bit of whipped cream on it.
