June 2, 2025 Breakfast - Lax and Bagel. Lunch - Tabouli Salad. Dinner - Thai Fish Soup
I slept until 7:30 and watched Squawk on the Street at the market slid negative but by 8:30 it was turning positive and it did so for the rest of the day until the close. It was not a great day but I was thrilled that it had righted itself, spurred on by Trump’s raise of tariffs on steel and aluminum that pushed up steel stocks.
My portfolio increased by 1.1% that was impressive because it was unexpected.
At 10:00 I toasted two slices of bagel, spread them with cream cheese, and garnished them with slices of red onion, Gravad lax, and capers with two pickles.
Then at 12:30 I walked to the bank. When I returned around 1:30 I picked a basket full of baby lettuce and added 1/2 a tomato, two pickles, and olives to make a salad, and toasted three slices of baguette and melted slices of Jarlsberg cheese and drank water for lunch.
Suzette came home around 4:30 hungry. So she heated the leftover Thai Fsh Soup with rice that we garnished with chopped green onion and cilantro.and we ate a simple delicious dinner with glasses of chilled Kirkland (Costco) Pinot Grigio, the best $5.00 bottle of white wine in Albuquerque.
After dinner I drank a glass of lemincello and later we decided later to eat some of the leftover apricot and blueberry cobbler. I whipped cream with a tsp. of sugar and vanilla that we spooned onto the cobbler after Suzette heated it. I drank a cup of Earl Grey tea with my cobbler.
We watched a Bollywood movie made in England an Indian family that was very satisfying.
Then at 8:30 we watched Joni Mitchell-Lady Blue.
After a few minutes Suzette went to bed. I stayed up and when the documentary ended I watched Rachel Maddow until 11:00 and blogged and then went to bed.
Bon Appetit
