May 12, 2025 Breakfast - granola with Tropical fruit Salad. lunch - Leftover Chirashi. Dinner - sautéed Roasted Pork Tacos

I loved the food today even though we are both sick, I with a sinus infection that’s gone into my lung and Suzette fighting a cold.

I ate granola with milk and tropical fruit salad at 9:30.

Then at 1:30 I ate a few bites of the leftover Chirashi from lunch on Saturday because the refrigerator door had been left open and I was not sure if the raw fish was still good.

When Suzette came home around 2:30 I was still feeling fine so we split the rest of the chirashi for lunch.

I had been tracking the stock market most of the day and at 3:30 I checked the market close and confirmed that I had the best day in the history of my investing career. The NASDAQ rose 780 points or 4.3% and the Dow rose 1161 points. My portfolio rose by almost 4%. My portfolio is currently 11% below its all time high. What is amazing is how dramatically the market can shift on the slightest news. For example today it rose dramatically on news that the US and China had agreed to suspend their reciprocal tariffs of over 100% on each other for 90 days. If trade talks falter there could be a equally great drop in the market.

At 5:30 I walked around the block and still maintained some the stamina I built on the vacation. I walked 2000 steps today.

When I returned home a picked three sprigs of mint and made a mojito with rum, soda water, mint flavored simple syrup, and ice. I forgot the lime juice.

We watched the news and the first hour of AntiqueRoadshow and then made dinner. Suzette had bought corn tortillas at El Super yesterday with the intention of making pork tacos with the pork tenderloin we cooked last night.

We had no cabbage but we decided to make a red onion, lettuce, tomato, and roasted yellow bell pepper that we added Mayo, sour cream, vinegar and a dash of vinegar to.

Suzette sautéed the pork strips to re-heat them and warmed four corn tortillas. She then filled each tortilla with a pile of the salad and reheated pork strips.

After dinner I ate two slices of fruit cake and took an antibiotic.

We went to bed at 9:00, but I got up to finish this blog.

Bon Appetit
